Cabbage is a cruciferous vegetable (like kale, Brussels sprouts, broccoli etc.) that is amazing for your health. I’m always trying to add more cruciferous veggies to meals without it being obvious.

Since the cabbage cooks down significantly, you can add a lot of cabbage to my Egg Roll Bowl recipe without noticing.

Ingredients

Sauce
  • 1/2 cup coconut aminos
  • 2 tbsp sesame oil
  • 2 tbsp chia seeds
  • 2 tbsp fresh lime juice
  • 1 tbsp raw honey (optional)
Bowl
  • 1 tbsp olive oil
  • 1 Ib ground turkey
  • 2 tbsp ginger, crushed
  • 4 cloves garlic, crushed
  • 4 green onions, thinly sliced
  • 1 (10-ounce) bag shredded cabbage or 4 cups cabbage, shredded
  • Half of a small purple cabbage - head shredded
  • 2 cups shredded carrots
  • 4 cups cooked rice, brown or black
  • Sesame seeds toasted
  • Wonton wrappers, air fried or baked
  • Spicy or sweet sauce like duck sauce (similar to a classic egg roll). Try sriracha, garlic chili sauce, Gochujang sauce, etc, for some spice.

Instructions

  1. In a small bowl, add coconut aminos, sesame oil, chia seeds, lime juice and honey (optional). Mix and set aside.
  2. In a large skillet, heat olive oil in a large skillet over medium-high heat. Add ground turkey, breaking it up as it cooks, until it’s mostly cooked through. Add the ginger, garlic and the whites of the green onions. Continue to cook until the chicken is completely cooked through.
  3. Add the sauce to the skillet along with all the shredded vegetables and mix together. Cook until the cabbage begins to wilt, about 5 minutes.
  4. To make the wontons, spray lightly or brush both sides of the wonton wrappers with olive or avocado oil once you lay them out on the air fryer tray. Air fry at 200 degree F for 2 minutes or until golden brown. As they cool, they get crispy.
  5. Serve over rice and top with the remaining green onions, sesame seeds, wontons and preferred sauce to add taste and spice or sweetness similar to classic egg roll dipping sauce. Enjoy!
