Healthy Chocolate Pudding

This chocolate pudding is an absolutely delicious health-promoting high-protein dessert that is gluten-free and can easily be dairy-free and plant-based. This pudding is made with tofu instead of protein powder or cottage cheese.

Silken Tofu is the key ingredient that gives this pudding the best texture and allows the chocolate flavor to be the main event.

Add raspberries or crushed frozen strawberries.

It’s pretty intense chocolate, so if you’re not a fierce chocolate fan, use two tablespoons of cacao powder instead of three tablespoons.

One of my 12 Fixes to Healthy Challenge Groups posted a yummy chocolate pudding made with tofu. I made it today for Valentine’s Day tomorrow!

Ingredients

  • 1 cup dark chocolate chips (or semi-sweet)
  • 6 oz Silken Tofu
  • 3 tbsp cocoa
  • 1/4 cup pure maple syrup
  • pinch salt

Instructions

  1. Melt chocolate chips in a double boiler (or microwave in 15 seconds intervals).
  2. Add the melted chocolate and all other ingredients to a high speed blender and blend until smooth.
  3. Pour pudding into 4 to 6 ramekins or small bowls and refrigerator overnight (or at least a few hours).
