Peach Quinoa Salad
This quinoa salad made with fresh peaches and mint brings on the summer vibes. The peach and mint combo gives a fresh, sweet taste. I used quinoa, but you can use any whole grain you want in place of quinoa. Quinoa is a complete protein and loaded with nutrients. Three-quarters of a cup of this salad provides over 13 grams of plant-based protein. I love the hazelnuts in this salad because they are so crisp but feel free to replace them with your favorite nuts. If you can find hazelnuts, they are delicious in this salad. I bought mine at Trader Joe's. Enjoy!
