People have been asking for my peanut butter popcorn recipe that I entered into the PBfit recipe contest recently (PBfit.com/recipecontest for the winning recipes).

This popcorn recipe didn’t get to the finals like my PB Overnight Chia Recipe did, but it’s a super good recipe too. 😋

You can make this popcorn with natural peanut butter, but I discovered it’s actually crispier using PBfit instead of peanut butter. 🥜

Bonus: There is 5g of protein and 3 g of fiber in every 1 1/4 cups. 🏆

Peanut Butter Popcorn

People have been asking for my peanut butter popcorn recipe that I entered into the PBfit recipe contest recently (PBfit.com/recipecontest for the winning recipes).This popcorn recipe didn’t get to the finals like my PB Overnight Chia Recipe did, but it’s a super good recipe too. 😋You can make this popcorn with natural peanut butter, but I discovered it’s actually crispier using PBfit instead of peanut butter. 🥜

Ingredients

  • 5 to 6 cups warm popcorn (1/4 cup popcorn kernels)
  • 2 tbsp raw honey
  • 1 tbsp pure maple syrup
  • 4 tbsp sugar-free PBfit or natural peanut butter
  • Sea salt to taste (optional)

Instructions

  1. Using a large bowl, heat raw honey and pure maple syrup (in any combination to add up to 3 tbsp) in the microwave for about 60 seconds or until hot.🍯
  2. Add PBfit or PB to the warm honey maple syrup mixture and stir until mixed well.
  3. Add warm popcorn (minus any unpopped kernels) to the warm peanut butter mixture and using two wooden spoons, one in each hand, mix until popcorn is evenly coated. Lightly salt if desired. Enjoy! 🍿
