Sweet Potato Wedges
Roasted purple and orange sweet potato wedges add lots of flavor, nutrition, and so much vibrant color to your plate! They are easy too. Roast them in a 400 degree F oven with a little of high-heat oil (like avocado oil or regular olive oil but not extra virgin olive oil).
Cut the purple sweet potatoes in thicker wedges than the orange sweet potatoes since the purple ones can dry out. The orange sweet potatoes keep their moistness no matter how long you cook them (well, maybe burnt ones aren't that good). The purple ones are so amazing looking with the orange sweet potato wedges, however, that it's worth adding at least one purple sweet potato to the mix. Yum!
