Looking for a healthy chocolate bread? This recipe includes vegetables and is naturally sweetened with dates, fruit, and pure maple syrup. The flour is whole grain, and the fat is from tahini. My diabetic son said this bread was slow to raise his blood sugar levels, and even then, he was surprised how blood sugar-friendly it was.

Ingredients

Blender
  • 3 zucchini (or 2 large zucchini), roughly cut (discard ends)
  • 2 eggs
  • 1 ripe banana or 1/2 cup unsweetened applesauce
  • 5 pitted Medjool dates
  • 1/2 cup maple syrup
  • 1/2 cup tahini
  • 1 tsp vanilla
  • 1 tbsp vinegar
  • 1 cup spelt whole grain flour
  • 1/2 cup cacao or cocoa
  • 1.5 tsp baking soda
  • 1 tsp salt
Fillings
  • 1 cup dark chocolate chips

Instructions

  1. In a blender, add the blender ingredients (see blender ingredients list)
  2. Blend until smooth
  3. Stir in 1 cup dark chocolate chips.
  4. Pour into prepared bread pan and sprinkle more dark chocolate chips over the top of the batter.
  5. Bake at 350 degrees F for an 60 to 65 minutes or until cooked through.
  6. Cool and enjoy!
