The tahini and lemon combo is a winner. 🍋The maple syrup or raw honey balances the lemon juice. 🍯 The mustard is optional but adds another level of depth and a little more thickness.

Ingredients

  • 2 tbsp tahini
  • 1 tsp garlic, crushed
  • 3 tbsp lemon juice, freshly squeezed
  • 2 tbsp olive oil
  • 1 - 2 tsp dijon or stone-ground mustard mustard (optional)
  • 2 tbsp maple syrup or raw honey (or more if you want it sweeter)
  • 1/4 tsp coarse salt
  • Freshly ground black pepper as desired
  • 1/4 tsp paprika (smoked or sweet)

Instructions

  1. Mix until smooth. Add water (or oil) if too thick, or mustard or tahini if too thin for desired consistency. Makes 3/4 cup or 6 oz. Store in fridge.

Notes

Pro Tips:

1️⃣ If you want to add a hint of Asian to this dressing, add a tsp of sesame oil. It’s delicious!

2️⃣ Keep your tahini in the fridge before and after you open it.

3️⃣ I used Soom Tahini @soomfoods in this recipe (which is a thicker tahini). If you use a thinner tahini, use 2 tbsp olive oil instead of 3 tbsp.
