These bagels are the perfect way to boost your breakfast or lunch. An egg sandwich made with these babies can easily provide over 30 grams of protein without adding breakfast meat. 🍳🥚🥯

Ingredients

  • 1 cup white whole or spelt wheat flour
  • 1 cup all-purpose flour (or oat flour)
  • 1/2 tsp table salt
  • 3 tsp baking powder
  • 2 cups well drained cottage cheese

Instructions

  1. Mix the following ingredients: 1 cup white whole or spelt wheat flour, 1 cup all-purpose flour (or oat flour), 1/2 tsp table salt, 3 tsp baking powder
  2. Add 2 cups of well-drained cottage cheese (@good_culture is my fav) to the flour mixture and mix well until small crumbles.
  3. Knead the dough until it’s smooth and doesn’t stick to your hands. More flour may be needed for your hands.
  4. Divide dough into 8 equally-sized balls. Either roll each ball into a long enough roll to form a circle with the dough or use your finger to form a hole in the middle of the ball.
  5. Dip the entire bagel in an egg (whisked) until it is completely covered. Sprinkle with toppings like sesame seeds, everything bagel seasoning, dried garlic, onion flakes, or coarse salt if desired. Repeat for all balls.
  6. Spray the bagels and the basket of your air fryer well with oil (parchment paper work too and is easier). Set the air fryer at 320°F on an air fry setting and cook for 14 minutes or until golden brown.
  7. Let cool for at least 10 minutes before indulging. ENJOY! 😋
